BYU's news release, below, does not say which school Ah You is transferring to, but one source familiar with Ah You's family believes that school is Weber State.
He cannot transfer to another Division I (FBS) school without sitting out a year. However, he can transfer to a FCS school, such as Weber State, and play immediately.

PROVO, Utah (May 4, 2009) -- BYU head coach Bronco Mendenhall today announced senior linebacker Matt Ah You will transfer from BYU.
"Matt has made a decision to transfer to finish his final season of eligibility, and I have granted him a release," Mendenhall said. "I appreciate his contributions to our program and wish him the best as he pursues his personal goals."
A graduate of Lone Peak High School in Highland, Utah, Ah You earned letterman honors all three seasons with the Cougars, seeing action in 26 games during the 2003, 2004 and 2008 seasons. Last year he played in all 13 contests, including two starts. The 5-foot-11, 220-pound linebacker totaled 68 tackles, one tackle for loss and one fumble recovery in three seasons with the Cougars.

Is he at the same LB spot that Pendleton plays?
No. Pendleton was moved to outside linebacker in the position that David Nixon played.
Ah You is an inside linebacker who backed up Matt Bauman and Shawn Doman.

So I'll ask the obvious question... why is he transferring?
Adam.....Ah You is transferring because he just can't handle going to one more fireside listening to the ever boring Mendenhall. He is also upset that a "theme" with a T-shirt has not been put into place for the next season. This is very upsetting for many.
Jay... once again you're breaking the story but it's incomplete. The "why" is even more important than the who, what, where, when and how.
In doing so you encourage pusillanimous twits like bigutefan to run their mouth before their brain is in gear.
