The art of "chiffonade"
Congratulations to Jessica Sims, winner of the Week 3 trivia contest.

She was one of several people who knew that "chiffonade" describes a method for cutting herbs and leafy greens into fine strips. The leaves are stacked on top of each other, rolled and then sliced. The method prevents the tender leaves from bruising.

Sims receives a copy the Season 3 DVD of Anthony Bourdain's "No Reservations."

I'll have another culinary question (and prize) next Monday. But I hope you check back before then.
